Place all dry ingredients in the bowl of a mixer with dough hooks.On low speed, mix it. Slowly add the water.Continue to knead until a soft ball of dough forms and clears the side of the bowl.Let it rise in the mixing bowl for about 5-10 minutes.Knead it again for about 5 minutes.Transfer it to a greased pan.Cover it and let it rise for about 1 hour (depending on the warmth of your place).Preheat oven to 220 C (428F). Put a bowl with water on the lowest rack (the steam helps producing a nice crust).Bake it for about 40 minutes.To check if the bread is done take it out of the pan and tap the bottom of the bread. The bread will sound hollow if it's done.Let it cool down on a wire rack before you cut it.Enjoy!
Best to make it with a combination of rye flour (400g) and white bread flour (200g) or whole wheat bread flour (400g) and white bread flour.
